Hot Chocolate on a Stick: Yum!

A while back I found a fun recipe for Hot Chocolate on a Stick. I mean, I love hot chocolate, and food on a stick, so it's a match made in heaven. I saved the link and pulled it out a few weeks ago deciding it would be perfect for this year's Christmas gifts.

The original recipe can be found here on the site Givers Log. I gave it a shot...and learned a few things along the way. Here's my version, if you want to try it!

Gather your materials:
(try not to scarf too many of them down before you begin...)
Ingredients:
Each batch makes 8-10 "cubes". You can make multiple batches, but I wouldn't suggest doubling it. You might be (probably are) more talented than I am, but it was challenging enough to get the consistency right....doubling or tripling seems risky.
  • 12oz of chocolate- any kind but higher percentage of cocoa butter is better....not vegetable oil based. Original recipe has a ton of info on this....I just used bags of chocolate chips available at the Giant Eagle- you know, cuz I'm fancy like that. You can experiment with flavors- I went with White Chocolate, Milk Chocolate, Cinnamon Chips (mixed 1/2 and 1/2 with regular chocolate) and Dark Chocolate.
  • 1/2 cup sifted confectioner’s sugar
  • 1/4 cup cocoa- The store was sold out of regular, so I got Dark Chocolate. Turned out delicious, so I'm sure you'll be fine either way.
  • Pinch of salt
  • Optional decorations: I used candy melts (like those from Wilton, available at craft stores), crushed up peppermint/candy canes, and extra cocoa for sprinkling, but you could use just about anything!
Supplies:
  • ice cube trays (make sure you get enough if you're making multiple batches)
  • sticks (I used some cheap ones found in the craft section of Michael's...they're prettier than popsicle sticks, but cheaper than the round ones sold in the baking area)
  • clear bags, twistie ties or twine, paper and glue stick for printing.
  • A double boiler, (If you've got one, awesome- it's about to earn its keep. If not, no fear, I just used a metal bowl.)
  • An awesome helper like my friend Kristin. (ok...you probably can't get one of these...but if you can, do it. She's the best!)
Now it's time to get down to business....
Before we begin, let me stress this: *Do NOT let ANY water get in your chocolate....none. It will be ruined. Consider yourself warned.
Here we go...
  • Simmer a couple of inches of water in large pot.
  • Reduce heat so it stays below a simmer.
  • Melt chocolate in double boiler/bowl. Bowl shouldn’t touch water at the bottom....also- don’t lift up the bowl...all the steam will rise up and get condensation in the chocolate. Bad news. (heed the warnings!)
  • When it’s 2/3 melted, remove pot(with bowl still on top) from heat. Continue stirring, until melted.
  • Add sugar, cocoa and salt. Stir until blended.
It should be about the consistency of frosting- smooth and glossy....
i.e. Not at all like this:
This was the first batch, and "failure" is an understatement. But my mess can be your success! We figured out a fix- After adding all the ingredients, if it’s dry or hard to stir, return to a low heat and add 1-2tsp vegetable oil. Good as new!
Then, pour into a ziplock bag, cut the tip and pipe into ice cube tray- no need to spray/coat them with anything. (and yes, it looks a little like poo- but it smells so good you won't care).Add sticks and let them dry (I left mine for a few hours, and they were *almost* done. Better to leave them over night so they're easy to remove from the trays. ) If you're making multiple different kinds, make sure to label them, so they (and you) don't get mixed up.
At this point, your kitchen, and your hands (and your helper's hands) are probably a complete disaster. We'll break for a minute while you clean up....
Once the chocolate is set, you can pop it out of the trays. It takes a bit of effort, but if they're all the way dry and cool, they should come out ok.
Now the fun part! You can dip it into other colors of chocolate or candy melts, and decorate with candy. For the drizzle, just melt some chocolate in the microwave and use a ziplock to pipe it on. A styrofoam block is helpful for this portion, so all the sticks can dry.Stick them in the Styrofoam to dry....shouldn't take more than a half hour or so.
I made:

  • Milk chocolate with white candy coating and peppermint candy pieces.
  • White chocolate with white candy coating and dark chocolate drizzle.
  • Dark chocolate with a mix of white and chocolate candy coating and dark chocolate drizzle.
  • Cinnamon chips and milk chocolate with white candy coating and cocoa "sprinkling"
If you're just making them for you then you're done! But ours were gifts, so they need that little something extra....the packaging. I designed and printed out "flags" to identify the flavors, and tags for the bags. Cut, glue, bag, and tag....
And voila! You have beautiful, and delicious gifts, perfect for snowy winter evenings.


Each 1oz cube makes an 8oz cup of hot chocolate.

The Real Griswolds

This Christmas eve, on the way home from spending the evening with family,
we toured a house showcasing its 27th annual light display. It was spectacular....
There were tiny dioramas everywhere, with real trains and moving characters that would light up, dance, or sing when you pressed a button.

I got to play with my camera a bit, and capture some fun lights.

Merry Christmas: Love, The Bowdens...

It's finally finished! This year's Christmas card...

It's a simple theme, featuring some highlights of the past year. For those of you that have been following our online musings, you'll already be familar with some of the items, but if not, here are some details behind the list...

9 Simple Pleasures from 2009:

1: Taking a deep breath of that New Car Smell.
The new baby has had it's share of ups and downs, but we love it.

2: Being the youngest people at a Mardi Gras celebration.
Those "Villagers" really know how to party!

3: 500 Kids singing "Livin' on a Prayer".
It's hard to choose a highlight of Young Life camp but tons of high-schoolers belting out a classic like this ranks pretty high on the list.

4: Getting up close and personal with a real live cactus.
Dustin has his first out west experience!

5: 6AM pull-ups
And sit-ups, and dead lifts, and lunges, and........

6: Riding roller coasters 'til we got dizzy.
Turns out six coasters is my back-to-back limit. (someone else's *cough*dustin*cough* is five).

7: Open mic night performances.
Overcoming fears and wowing the crowd.

8: Challenging each other to escalator races.
So steep!

9: Getting brain freezes from road trip slushies.
Yum!

Snow Day!

When we awoke yesterday, our house (and yard, and street...) were covered with a thick white blanket....
Of SNOW! I had a few errands to run, but none worth trekking out into the blizzard-y abyss.
Besides....I'm not sure I could even get in the car:



So we had an indoor-day, and soon found ourself buried in other things....

There was cleaning to do:
Presents to wrap: (don't be fooled...these boxes are just the wrapping supplies)


And crafts to tackle:

It was great excuse to get productive, with the extra bonus of having a beautiful backdrop for all the work.

The making of a Christmas card...

I may not get into all of Christmas all the time, but there is at least one thing I always love about this time of year: Christmas cards.

I love to opening the mail, I love reading the letters, I love looking at the matching-sweaters photos. And I really love to put together our card each year.

More accurately I have a bit of a love-hate with the process of our yearly card, as it's an area where I reveal a lot of my type-A tendencies. I refuse to go store-bought (not judging! just saying!), I have a laundry list of specifications (custom coordinated return address labels, particular pen for signing) and I try to craft our update into the most fun, creative format I can muster. I brainstorm themes months in advance, eventually working myself into a frenzy that is neither necessary, nor rational. (Last year the panic escalated to the point where I had to exit the game completely- sorry if you're still waiting on your 2008 letter). I don't know why I stress about it so much. Perhaps it has to do with my long standing need to impress others (um, duh. I have a blog.) Or my habit of approaching simple tasks with a relentless passion/perfectionist combo, placing undue pressure and standards on myself. I may not take the perfectly posed photo of Dustin and I in front of the tree, but our card is still a carefully constructed self portrait. But despite my self-centered anxiety, in my heart I know the purpose of the card isn't to make an impression on others, but to make a connection, and to celebrate a season marked with joy, gratitude and love. I really do enjoy hearing from friends and family during this time, and I hope our silly little efforts at least bring you a smile.

So for those of you wishing to follow in my anxiety ridden footsteps, I give to you:
Courtney Bowden's Guide to Overthinking Stuff- The Christmas Card Edition:

  • Design- Edit, analyze, agonize over font size, color, style, capitals vs. lowercase, word choice, word order, margin size......Repeat ad naseum.
  • Print. Again and again and again, until it all lines up right. (why is double sided so hard for me?! Five YEARS of school and still I can't master this....)
  • Crop, one by one by one.
  • Sign (after testing multiple message placements for optimum visual balance, of course).
  • Debate hand addressing vs. printing labels. Compromise by printing directly on envelopes- (searching for the perfect font so they appear hand addressed). Painstakingly feed envelopes through printer one at a time.
  • Realize half of the necessary addresses are missing....send mass email.
  • Stuff- Front facing up, envelope opening to right for consistency and easy reading.
  • Drink. (Kidding!) (?)
  • Stamp- research available options on post office website....(Nutcrackers or Gingerbread men?!?!) Give up and buy "forever" stamps, but deep down still fret that they ruined the seasonal continuity.
  • Send.
  • Reveal OCD tendencies to online audience.

Bah Humbug!

Confession time:
I'm a grinch.

Yes, as much as it pains me to say it, I'm afraid it's true. For the first time in my life, I really just can't seem to get into the holiday spirit.
I haven't baked cookies.
I haven't wrapped presents.
I haven't set up a tree (or so much as opened the box of Christmas decorations.)
I haven't even participated in my own Advent activities! (except the really easy ones...sometimes by accident.)

I've been completely and utterly (and redundantly) overwhelmed by work, and the sad fact of the retal world is that I've already "been there and done that" when it comes to decorations. After you set up a hundred (literally) strands of garland and lights, at least five christmas trees, and too many stockings to count, the excitement starts to wane a bit.

But, it's not to say I'm a total scrooge. In fact:

I have attended three (count 'em, THREE) holiday parties- one in heels, and one in a Santa costume: Double points!
I have organized a "Secret Stocking" exchange for my office.
I have made our Christmas cards.

And I've got high hopes:

I will mail our Christmas cards.
I will host a Young Life Christmas party (complete with "White Elephant" exchange).
I will bake something special for the office potluck.
I will make gifts- finishing some works in progress, and starting a few new ones!

When I start to look at it in black and white, I realize that perhaps my Merriment Mojo isn't as bad as I thought. (I didn't even mention that I already watched Elf.- it was on the bus on the way to a YL retreat, and I slept through the middle, but STILL.) I've had fun working on our cards (more on that soon!), dressing up for parties, and I'm excited to have a free weekend coming up to get moving on some projects.

But....
I will not decorate. You'll all have to just remember last year and pretend....

Season Sigh....I mean Six.

Ok, so I know I've been out of the SYTYCD loop for a while, but let me get this straight....The finale is next WEEK? Since when do the top six go to the finale? Is the show so bad this season that we just have to put it out of its misery? Why stop there, why not just combine the top/final 20? Get it out of the way.....we could have 10 seasons a year! ugh...

I'm sorry guys, but I have to be honest here- I am just not feeling this season. I'm sorry!! I wanted to like it....I really really wanted to. But something's just not the same. I don't feel connected to the show like I once was. I used to look forward to every single performance, now I find myself fast forwarding through as much as possible. I've missed a few episodes (unheard of in previous seasons) so that's part of why I don't have loyalty to the contestants....but the show used to have an addicting pull to it, and now (to me) it just feels blah.

Normally I savory every routine, and even watch all the judges commentary- excited to see what they say...wanting them to echo my excitement and verbalize the feelings the performances stirred inside me. But that feeling is gone. There are no goosebumps, no chills, no rewinding to watch it again, no calling Dustin in to see something because it's just THAT amazing.

I miss my favorite show...

So, though it's my turn, I can't bring myself to recap tonight's show. Instead- I want to hear from you. What do you think of the season? Is there something missing? Or is it as good as ever? If you're having trouble connecting....why do you think that is?

Is it that they messed with the "formula"? Because Mia's gone? is it the addition of Adam to the panel? The new set? Or is it the contestants? I can't find someone I just LOOOOOOOOOOOVE. They're all nice enough, but no one I'm dying to pick up the phone for. I usually hate it when shows like this talk about the "it" factor, but maybe that's what is wrong here?

Mary actually summed up my thoughts (which is a scary scary concept) in her critique of the NappyTab "Strange" routine.
"It's kinda like when you go to the movies and you see the coming attractions and you see something and you go, 'Oh my gosh, this movie is going to be so exciting I've just got to go out and see it.' The beginning of that was like the coming attractions for me, and I just loved it, and I was all fired up about it. And then I was just slightly disappointed after that. It didn't really "hit" for me.....I was left a little disappointed honestly, and I'm sorry to say that."

I had high hopes for this season....tell me it's not too late?

P.s. Cat is still beautiful and awesome. That, thank goodness, will never change.
